Recipe Ingredients
    • 1 can Sea Isle Red Kidney Beans (or Black Beans), drained and rinsed
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tsp ginger paste
    • 1 tsp ground cumin
    • 1 tsp paprika or mild curry powder
    • 1 tin chopped tomatoes
    • 2–3 tbsp cream or coconut cream
    • 1 tbsp oil
    • Salt, to taste
    • Fresh coriander, to garnish
    • Flatbreads or naan, to serve

Method

    • Heat oil in a pan and sauté the onion until soft.
    • Add garlic, ginger and spices, cooking until fragrant.
    • Stir in chopped tomatoes and simmer for 5–7 minutes.
    • Add the beans and cook for another 5 minutes until thick and rich.
    • Finish with cream, season to taste and garnish with fresh coriander. Serving idea: Serve hot with warm flatbreads or rice for an easy, comforting meal that feels homemade with minimal effort
