Simple Caribbean Curried Fish with Long Grain Rice

A comforting Caribbean classic featuring tender white fish simmered in a lightly spiced curry sauce with peppers and herbs. Served alongside fluffy long-grain rice, it’s an easy, flavour-packed meal that’s perfect for a quick weeknight dinner but still feels special.

  • 10g Sea Isle Fish Seasoning
  • 1g Sea Isle Ground Black Pepper
  • 400ml Sea Isle Coconut milk
Recipe Ingredients
    • 600g White fish fillets (cod, pollock or hake)
    • 20ml Vegetable oil
    • 150g Onion (sliced)
    • 10g Garlic (chopped)
    • 15g Sea Isle Mild or Hot Curry Powder
    • 200g Chopped tomatoes (tinned)
    • 1g Sea Isle Dried Thyme

    Rice

    • 300g Sea Isle Long Grain Rice
    • 600ml Water
    • Pinch Sea Isle All Purpose Seasoning

Method

    • Season fish with Fish Seasoning and black pepper.
    • Fry onion and garlic in oil until soft. Stir in curry powder and cook 1 minute.
    • Add tomatoes and coconut milk, simmer 5 minutes.
    • Add fish, cover and cook gently 8–10 minutes.
    • Serve with steamed rice.
