Fresh, colourful and full of flavour — this easy mango and black bean salad brings together sweet, zesty and savoury in every bite. Perfect as a light lunch, BBQ side or taco topping.

  • Sea Isle Black Beans, drained and rinsed
Recipe Ingredients
    • 1 ripe mango, diced
    • 1 avocado, diced
    • Handful cherry tomatoes, halved
    • ½ red onion, finely chopped
    • Fresh coriander or parsley, chopped
    • Juice of 1 lime
    • 1–2 tbsp olive oil
    • Salt & black pepper, to taste
    • Optional: pinch of chilli flakes or all-purpose seasoning

Method

    • Add the black beans, mango, avocado, tomatoes and red onion to a large bowl.
    • Drizzle over lime juice and olive oil.
    • Season with salt, pepper and chilli flakes if using.
    • Gently toss, finish with fresh herbs, and serve. Serving ideas: Enjoy on its own, spoon over grilled chicken or fish, or serve with tortilla chips for an easy sharing dish
