Fresh, colourful and full of flavour — this easy mango and black bean salad brings together sweet, zesty and savoury in every bite. Perfect as a light lunch, BBQ side or taco topping.

Sea Isle Black Beans, drained and rinsed
1 ripe mango, diced
1 avocado, diced
Handful cherry tomatoes, halved
½ red onion, finely chopped
Fresh coriander or parsley, chopped
Juice of 1 lime
1–2 tbsp olive oil
Salt & black pepper, to taste
Optional: pinch of chilli flakes or all-purpose seasoning
Method
Add the black beans, mango, avocado, tomatoes and red onion to a large bowl.
Drizzle over lime juice and olive oil.
Season with salt, pepper and chilli flakes if using.
Gently toss, finish with fresh herbs, and serve.
Serving ideas:
Enjoy on its own, spoon over grilled chicken or fish, or serve with tortilla chips for an easy sharing dish
