Sea Isle Red Kidney Beans, drained and rinsed
1 can Sea Isle Red Kidney Beans (or Black Beans), drained and rinsed
1 onion, finely chopped
2 cloves garlic, minced
1 tsp ginger paste
1 tsp ground cumin
1 tsp paprika or mild curry powder
1 tin chopped tomatoes
2–3 tbsp cream or coconut cream
1 tbsp oil
Salt, to taste
Fresh coriander, to garnish
Flatbreads or naan, to serve
Method
Heat oil in a pan and sauté the onion until soft.
Add garlic, ginger and spices, cooking until fragrant.
Stir in chopped tomatoes and simmer for 5–7 minutes.
Add the beans and cook for another 5 minutes until thick and rich.
Finish with cream, season to taste and garnish with fresh coriander.
Serving idea:
Serve hot with warm flatbreads or rice for an easy, comforting meal that feels homemade with minimal effort
